Magic Cake: Cake & Frosting All-In-One



Hi friends! Sorry I haven't posted since before Halloween, I've been super busy working on several projects! I've been eager to get a new post up, and I can't think of a better one than CAKE! ;) This is seriously the neatest cake ever, you absolutely must try it. It's super easy to whip up and tastes amazing. This will be my new go-to recipe when I want a yummy white cake QUICK, because we all have those times, right? Enjoy! :)

Ingredients:
Frosting:
3 3/4 Cup Confectioner's Sugar
1 Stick Butter, softened
3 oz. Cream Cheese, softened
1/3 Cup Milk

Cake:
1 1/4 Cups All-Purpose Flour
2 Eggs
1/2 Teaspoon Baking Powder
1/4 Teaspoon Salt
1 Teaspoon Vanilla Extract
1/3 Cup Water

Directions:
Pre-heat oven to 350 degrees. Generously spray a 8 x 8 baking pan with non-stick cooking spray.

For the frosting:
In a mixer fitted with the paddle attachment, beat the cream cheese and butter until smooth and creamy. Add the confectioner's sugar alternately with the milk, beating until well blended. Remove 1 cup of the frosting and set it aside.

For the cake:
Add your eggs and vanilla to the remaining frosting mixture; beat at low speed until evenly incorporated. In a small bowl, combine your flour, salt and baking powder. Add flour mixture to the mixing bowl alternately with water, ending with flour, until well combined. 

Pour into baking pan and bake for 30-40 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.

Once cooled, you can remove it from the pan and frost the top and sides with the frosting that you set aside earlier, or you can frost it in the pan and cut slices from there. 

Makes 9 cake servings
