Gingerbread Cupcakes with Cream Cheese Frosting



Hi there :) I've finally caught the holiday baking itch! This ice storm that we are currently going through in the Dallas area may have something to do with it. It's supposed to get down to 15 degrees early tomorrow morning..I don't think I've ever experienced temperatures that cold in my 11+ years of living in Texas. I will say i'm enjoying being all cozied up inside though :) I think these delicious cupcakes are a perfect way to kick off the holiday baking season, wouldn't you agree?! Let's get to it...

Ingredients:

Cake:
2 1/2 Cups All-Purpose Flour
2 Teaspoons Baking Powder
2 Teaspoons Ground Ginger
1 Teaspoon Ground Cinnamon
1 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Stick Butter, softened
3/4 Cup Packed Brown Sugar
1/2 Cup Molasses
2 Eggs
1 Teaspoon Vanilla Extract
1 Cup Boiling Water

Frosting:
1 Package (8 oz) Cream Cheese, softened
1 Stick Butter, softened
1 1/2 Teaspoons Vanilla Extract
4 Cups Powdered Sugar

Directions:

For the cake:
Pre-heat oven to 350 degrees.

In the bowl of a mixer beat butter, brown sugar and molasses until smooth and creamy. Add eggs and vanilla; beat well. 

In a small bowl combine the flour, baking powder, ginger, cinnamon, baking soda and salt.

Add flour mixture alternately with boiling water, beating after each addition. 

Scoop batter into paper-lined muffin cups, filling each cup about 2/3 full of batter. 

Bake 20-25 minutes or until a toothpick inserted in the center of a cupcake comes out clean. Cool completely.

For the frosting:
Beat cream cheese, butter and vanilla together until fluffy. Gradually beat in confectioners sugar and mix until smooth and creamy. Frost cooled cupcakes.
